Oatmeal and toasted walnuts

oatmeal:

  • 1 cup milk

  • 1 cup water

  • 1 cup oats

  • 2 tbsp sugar

  • 1 tsp cinnamon

  • 1 tsp molasses

  • 1/2 tsp vanilla extract

  • Pinch of kosher salt

Walnut topping:

  • 1-2 cups walnuts

  • 3 tbsp sugar

  • 2 tbsp oil (I used olive oil, but coconut is a great option too)

  • 1 tsp kosher salt

Garnish:

  • Blackberries

  • Raspberries

 

Preparation:

  • Prepare the oatmeal by adding the water and milk to a pot on medium low. Add the remainder of the ingredients, cover and cook for 8-10 minutes or until oats have reached your desired texture.

  • Chop the walnuts. Add the oil, sugar, and salt and mix thoroughly to coat. Line a baking sheet with parchment paper and bake @ 350° for 8-10 minutes.

  • Top the oatmeal with walnuts and whatever fruit you desire.

  • Enjoy.
