Oatmeal and toasted walnuts
oatmeal:
1 cup milk
1 cup water
1 cup oats
2 tbsp sugar
1 tsp cinnamon
1 tsp molasses
1/2 tsp vanilla extract
Pinch of kosher salt
Walnut topping:
1-2 cups walnuts
3 tbsp sugar
2 tbsp oil (I used olive oil, but coconut is a great option too)
1 tsp kosher salt
Garnish:
Blackberries
Raspberries
Preparation:
Prepare the oatmeal by adding the water and milk to a pot on medium low. Add the remainder of the ingredients, cover and cook for 8-10 minutes or until oats have reached your desired texture.
Chop the walnuts. Add the oil, sugar, and salt and mix thoroughly to coat. Line a baking sheet with parchment paper and bake @ 350° for 8-10 minutes.
Top the oatmeal with walnuts and whatever fruit you desire.
