buns & burger:

  • 360g bread flour

  • 225g whole milk (lukewarm)

  • 4 tbsp butter

  • 1 egg yolk

  • 2 tsp salt

  • 1 tsp sugar

  • 1 tbsp instant yeast

  • ground beef

  • cheddar cheese

  • bacon

  • red onion

  • lettuce

  • tomato

  • butter (for toasting the buns and sautéing the onion)

  • 1 whole egg/splash of milk (for brushing)

sauce:

  • 2 tbsp mayonaise

  • 2 tbsp ketchup

  • 1/2 tbsp dill pickle juice

  • 1/2 tsp garlic powder

  • 1/4 tsp smoked paprika

  • 1/4 tsp chipotle chili powder

  • 1/2 tsp cayenne pepper

  • black pepper

  • tabasco

 

Preparation: (recipe yields 6 hamburger buns)

  • Add the flour, salt, yeast, and sugar to a large bowl. Whisk to combine. Add the milk, knead the mixture either by hand or with a stand mixer. Once the dough begins to come together, add the egg yolk. Continue kneading.

  • Once the dough is cohesive and no longer appears shaggy, add the butter 1 tbsp at a time. Continue mixing until incorporated. Continue kneading until the dough has become soft and smooth, about 10 minutes.

  • Cover and let rise for 1 hour, or until doubled in size.

  • Once the dough has doubled in size, punch it down. Using a kitchen scale, separate the dough into 6 individual 110g balls. There are several ways to get nice smooth surfaces for your buns. Essentially, the goal is to rotate the dough in a circle on a dry work surface by pushing and pulling the dough causing the dough to stretch over itself thereby creating a smooth and even bun. You can also accomplish this in the palm of your hand, as I demonstrated in the video. It takes a little practice, but once you get the hang of it, it becomes 2nd nature. Also, if by some chance your buns aren’t “perfect”—ask yourself this. Who created that standard anyway? At the end of the day, I promise you—it doesn’t actually matter. They’ll still taste great and that’s what’s important. steps off soapbox Cover and let rise at room temperature for another 45 minutes to an hour, or until the buns have doubled in size.

  • In a small bowl add 1 whole egg and a splash of milk. Whisk to combine. Brush the top of the buns with the egg/milk mixture.

  • Bake @ 375° for 20-22 minutes, or until the buns are golden brown.

  • Place the bacon on baking tray lined with aluminum foil. Add black pepper, along with a dusting of brown sugar. Bake @ 400° for 5-7 minutes, or until crispy.

  • Shape the beef into patties and cook in a skillet on medium high. Salt and black pepper and then smash the patties. Cook for 3-4 minutes per side. Add cheese.

  • Slice the red onion. Add 1 tbsp of butter to the skillet, then place the red onion into the pan. Dash of salt, and then sauté for 5-7 minutes or until the onions appear translucent.

  • Reduce the heat to medium low and then add butter. Slice the bun in half, coat the inside with butter and then toast until golden brown.

  • Chop the lettuce. Slice a tomato, sprinkle with kosher salt.

  • Prepare the sauce by adding all of the ingredients into a small bowl and then whisk to combine.

  • Assemble the burger.

  • Enjoy.
